If our weather is May-beautiful, we’ll enjoy our champagne and these delicious hors d’oeuvres on the restaurant’s lakeside deck. From the first morsels, you’ll enjoy Chef Andre’s talented blending of French and Asian flavors and presentation.

Beau Soleil Oysters–Ver Jus, Asparagus Chawanmushi, French Fries, Caviar Mayonnaise, and Porcupine Meatballs

With his Winter meets Spring, Chef Andre delivers a Parisian-style appetizer: 
Seared Scallop on a bed of Pain d’ Espice, Pea and Carrot puree, Pea shoots, Salt Cured Foie Gras Shavings that will be flattered with the 2019 Domaine Thomas Morey Chassagne-Montrachet, 1er Cru, Morgeot.

Only talent and imagination can foresee the pairing and deliciousness of our Middle Course:
Rabbit Croquette, Fregola Sardinia Pasta, Watercress, Lemon and Pistachio, which blends French style with Italian flavors and calls for a Mediterranean Rose.

Main Course:
Koji Duck Breast, Smoked Mushrooms, Hakurei Turnips, Creamer Potato with Comte’ Cheese
Chef Andre’s years of experience and passion for blending Japanese ingredients and techniques will treat you to the velvety textured, intensely flavored, seared crust of his Koji Duck Breast. Alongside your plate will be the fabulously aromatic, flavored and structured 2005 Bordeaux that’s been waiting for an incredible dish like this from a chef like Andre de Waal.

Dessert:
Orgeat Cake, Fresh Strawberry, Calamansi Curd, Fromage Blanc Ice Cream.
Asia and France will have a final cha-cha-cha with the Almond cake’s mandarin orange-like Calamnasi Curd with a classic Fromage Blanc Ice Cream. An Eiswein (Ice Wine) will capture the yin and yang of sweet and tart flavors in and around the dessert.
